I note from the photo that the Max 7 has 2 over wing emergency exits. Does anyone know why this is the case? I didn't think the passenger capacity was substantially different from the 700NG.

Could be for simplicity of production as all the other variants contain 2 overwing exits. Plus some low cost carriers like to push the limits lmao.

The -7 has a longer fuselage than the -700. Somewhere around 6.3ft IIRC.

With a single overwing exit (type III) the -700 (and -7) is exit limited to 145/149 pax pending on config. A pair of type III would raise the limit to 180/189 in a theory. Practically I think the -7 will be at 172 seats.
