How does the Aeroclassics 747 Big Bird mold hold up today?

The GJ vertical stabilizer is better than BigBird's. I think the GJ one actually has an edge, they updated it with antenas and new gears, the BigBird Mk.3 only got antennas.

The BigBird mold just got super famous because they used it well, and there are so many sought-after models cast on that mold.

From what I can see I agree that the vertical stab is casted better on the GJ version. In my opinion this is more important for the 747 than the engine pylons.

Indeed! I forgot about the vertical stab. A bit too thin on the BB and sometimes the angles look off. GJ looks better.
 
It really depends when the model was made and which version of the mould was being used as to which version is better. The older Gemini 747s are pretty poor. The later ones (made from 2006) are much better, especially when they updated the landing gear. The GJ 747 always feels rather chunky in hand. I do prefer the BigBirds but happy with the Geminis I have. This 2009 NW example stands up pretty well with the modified landing gear:

Talking about the pylons: I don't like the GJ ones, but take a look at this poor Corsair 747:

for some reason, the pylons look way worse than in other releases.
I have this Tower 747 and the pylons don't look as bad as this Corsair example!

The later ones (made from 2006) are much better, especially when they updated the landing gear. The GJ 747 always feels rather chunky in hand. You are absolutely correct. It is true that in the early days, when the GJ 747 classics didn't have HF antennas, had a seam on the tail cone, and had a primitive landing gear, the BigBird mold was indisputably superior. After the GJ mold was updated, they became equivalent, I think.

Specifically, I was curious about the below release vs the Aero classics equivalent... Haven't decided if I should wait on HX or pull the trigger on this one if it's still good enough by today's standards.
